The Method

  1. Preheat the oven to 180°C, fan 160°C, gas 4. Line the base of a deep 20cm cake tin with baking paper and grease around the edges
  2. Sprinkle 25g of caster sugar over the lined cake tin base and arrange slices of blood orange on top of the sugar and set to one side
  3. In a large mixing bowl, cream together the remaining caster sugar and butter until pale and fluffy
  4. Add in each egg, one by one
  5. Mix in zest and juice of two blood oranges
  6. Sift in the flour, baking powder and a pinch of salt and fold together gently until combined
  7. Gently spoon the mixture onto the pre-prepared cake tin, being careful as to not dislodge the slices of orange
  8. Bake for 35 – 45 minutes until a skewer comes out clean
  9. Leave to cool in the cake tin, then turn out and remove the sheet of baking paper to reveal the lightly caramelised slices of blood orange on top
